I like to have meals in the freezer, esp over the winter months as I find this is the hardest time for me. Winter Wellness for me includes warm food on the go!!! I find when I get cold, or low in mood, I'll do fetal couch potato, miserable and I'll go hungry...there is no one to feed me, but me. SOooooooooo

I'm a fuss ball, only white meat ( chicken) and don't eat potato nor indulge in cheese.......Chocolate on the other hand well.....

DO YOU HAVE A RECIPE FOR WINTER WELLNESS???? Very Happy a RECIPE, the favourite one that picks you up? not literally but yah know what I mean Smile

Chicken soup

1TBSP butter
1 Large onion
1 large potato
1 stalk of celery…. I use half a bunch..4 J
1 or 2 cups of mushrooms
4 cups of chicken stock - I use 1 litre chicken stock liquid -store purchased
Pinch of dried thyme/
1 boneless chicken breast - cubed
I add about 8 pieces of fettuccine dried pasta - break up into 3rds ( any pasta will do - optional but makes the soup go further)

Melt butter in large pot, cut the onion, potato and celery into small cubes and stir these together with thyme/herb into the butter. Cover and cook without browning for about 5min.

Add mushrooms, stock and chicken - heat till boiling - add pasta, simmer for 20mins, until cooked.

Like any recipe it can be changed - exchange options , (butter - I use gold n canola- lite (marg)- no onion - use garlic instead, don’t like mushrooms? add some cubed carrot…… your choice.

Being on my own. Once the soup is cold…chicken needs to be cold! I separate the soup into containers -single serve amount I can consume - freeze the soup.

I find this soup thickens so when I defrost I add a bit of water to it.

Very yummy, and also good for people who are restricted by food restrictions from medication like Parnate. (Maoi)

RE: Chicken - chicken breast purchased on sale about $5.00 Chicken thigh - cheaper????
What ever your budget can handle.

Lentil Soup

(not like old fashioned Lentil Soup)

1 Cup red lentils,
1 litre hot water,
25-50g butter,
1 onion,
1 or 2 cloves garlic,
1 or 2 carrots (I use a parsnip & 1 carrot),
1or 2 stalks celery,
1 tsp whole or ground cumin seeds,
½ tsp ground coriander,
½ tsp garam marsala,
½ tsp paprika,
1 cup frozen peas,
tin chopped tomatoes,
¼ cup chopped fresh herbs
1 Tabsp sugar (opt)
1-11/2 tsp salt

(I grind whole cumin seeds in a pestle and mortar)


Cover lentils with hot water as soon as you think about making this soup.

Melt the butter in saucepan. Add the chopped onions, garlic, carrots and celery. Add the cumin, coriander, garam marsala and paprika to the vegetables.

Cook over moderate heat, stirring occasionally, for 2 – 3 minutes longer, without letting the vegetables brown.

Add the hot water and lentils, cover and simmer for about 20 (may be less) minutes or until the vegetable are tender.

Add the peas (or other frozen vegetables) and the tomato that has been chopped the same size as the
peas. Add the sugar, then salt to taste. You will need at least a teaspoon, or the soup will be flavourless. Add small amounts, tasting carefully.

Add chopped parsley, spring onions or chives and small amounts of other fresh herbs such as basil, thyme and oregano. Serve with toast or croutons (we call them cretins!), french bread or bread rolls.


I LOVE this soup ..... never started making soups till I was aboujt 35!!!!!!!

Two of my favourite recipes from Mum

Mince

Prime mince (or normal, doesn't matter as you take the fat of anyway)
Mixed veges
Cubed potato
Beef stock
Little bit of cornflour / flour

Place mince in a stock pot or large saucepan and cover with a bit of water, (just a little bit above the mince)
Bring to the boil for 5-10 mins, stirring a few times
Scoop of the fat and boil up
Add veges and a bit of beef stock to taste
Thicken with a little bit of cornflour or flour


Vege Soup

Gravey beef / blade steak
Kings vege sachet
Grated carrot
Grated pumpkin
Cubed potato

3/4 fulla stock pot of water (about 6-9 cups), add meat and boil
Add carrot, pumpkin, potato and vege sachet, boil
Can add 1tsp beef stock

You can change the veges and add what you like either grated or cubed.


Sorry about the brief instructions, that's what mum gave me and basically they are just 'throw it all in the pot and boil' type things.

Hello Guys i think that Pumpkin just goes naturally with winter. This great method calls for a 15 ounces can of cooled pumpkin,include 1/4 cup of white sugar, 1/4 tsp. of pumpkin liven, and a take of pulled cream. Merge the substances into a mixer and combination until sleek.Thanks a lot!!
